I woke up craving pancakes, and a complicated recipe was not calling my name. Instead of heading for the prepackaged pancake mix, I whipped up this recipe in no time. You almost definitely have all that you need and you can customize it however you’d like!

Yield: about 9 small pancakes

Time: 15 minutes

Ingredients:

  • ½ cup whole wheat flour
  • ½ cup almond milk
  • 1 egg
  • ½ tsp baking powder
  • dash of salt
  • half scoop of protein powder (optional)

Instructions:

  • Throw all ingredients into a bowl and stir to combine. Cook on medium-high heat for about 2 mins, then flip and cook other side until golden.
  • If you would like an added boost of protein, add any protein powder of your choice! For toppings I added vanilla greek yogurt and warmed natural peanut butter!

Nutrition:

Almond milk

It’s cholesterol and lactose free and contains good fats, which are superior to the saturated fats found in cow’s milk, a cup contains 50% of your recommended daily amount of Vitamin E to help with skin health
