Roasted Maple Cinnamon Sweet Potatoes

It’s OFFICIALLY OCTOBER! That means it’s time to break out the fall foods (obviously, the best foods out of all the seasons!) Here’s a super simple recipe for sweet potatoes that will definitely add some fall spice to your meal. For the original recipe check it out here.

Yield: About 4 servings

Time: 35 minutes

  • 3 large sweet potatoes (peeled and cut into 1 inch cubes)
  • 2 tbsp olive oil
  • 2 1/2 tbsp maple syrup
  • 2 tsp cinnamon
  • Salt and pepper (to taste)

  • Preheat oven to 400 degrees and lightly coat a baking pan with non-stick cooking spray
  • In a medium bowl, combine the olive oil, maple syrup, cinnamon, salt and pepper
  • Add potatoes and toss to coat fully, then spread evenly onto the pan
  • Roast for 30-35 minutes, or until they look brown and slightly crispy
  • Remove them from the oven and let them cool for about 5 mins
  • Serve!

Sweet Potato (one of my favourite foods)

  • great source of Vitamin A because of the beta-carotene found in them (studies have shown they can meet 90% of your Vitamin A needs, just this food!)
  • Anthocyanin (a colour-related pigment in sweet potatoes) is an anti-inflammatory
  • good source of magnesium which helps with relaxation and reducing stress
  • great source of Vitamin D, which helps during the colder months because it’s the vitamin made in our bodies when we get enough sunlight (which helps with seasonal affective disorder)
