Super Chocolatey Banana Muffins (No Butter, Milk or Nuts!)

We have a cupboard devoted just to cookbooks, and although I like to gaze through the newest ones we’ve collected, sometimes I have to appreciate the older ones. This particular recipe is from an ancient cookbook called “The Baker’s Chocolate Cookbook.” If you’re a fan of chocolate, you’ll go wild over this.


  • 1/3 cup vegetable oil
  • 1/2 cup sugar
  • 1 egg
  • 1 cup mashed ripe bananas (about 3 medium, super spotty)
  • 1 pkg Baker’s Semi-Sweet Chocolate Chips (about 300 g)
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon


  • Preheat oven to 350 degrees
  • Whisk the oil, sugar and egg together in a large bowl
  • Stir in the mashed bananas (just used a fork) and half the package of chocolate chips
  • In a separate bowl, combine the flour, baking soda, salt and cinnamon, then stir it into the other mixture just enough to moisten it
  • Spoon the mixture into 12 muffin cups, then sprinkle the remaining chocolate chips over the top of them
  • Bake for 15 – 20 minutes

WARNING: These are EXTRA chocolatey (sometimes I only use about 2/3 of the package of chocolate chips, so be aware…)
