Vegan French Toast

I wasn’t a fan of french toast before, it always tasted too eggy and soggy. The toppings were too sweet for me and it didn’t fill me up that much. I had to let go of those worries when I tried these. This vegan french toast will satisfy your sweet tooth without any animal products, and the added chia seeds are a great superfood to start your morning. This recipe serves about 2-3 people (or 1 for very hungry individual…)

Ingredients:

  • 1 large tbsp chia seeds
  • 1/2 tbsp maple syrup (or other liquid sweetener)
  • 1 cup unsweetened almond milk
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 4-5 slices bread (I used whole wheat, but a hearty, slightly stale bread would taste great too)

Instructions:

  • Mix all ingredients together (except for the bread) in a shallow bowl, then set it in the fridge for about 15 minutes so the chia seeds can expand
  • Preheat your pan to medium heat and grease (I used coconut oil)
  • Dip each side of the bread for about 10 seconds (increase this time if it’s thicker or drier than sandwich bread)
  • Place it on the pan and cook until golden brown, then flip it and brown the other side
  • Top with anything you choose (I used maple syrup, fresh strawberries and vanilla greek yogurt)
