Granola Goodness Bars

There’s nothing more gratifying than feeling like a snack and being able to reach for something homemade (and healthy!) These bars are thick, chewy and crunchy, enveloped in smooth almond butter. So try them out, and then make some more because they’re that good.


  • 1 cup pitted Medjool dates
  • 1/4 cup maple syrup (or honey)
  • 1/4 cup almond butter (or peanut butter)
  • 1 cup chopped cashews (can sub. for other nuts)
  • 1 1/2 cups rolled oats


  • Process the dates in a food processor until it forms into a large ball (or looks like dough)
  • Put oats, cashews and dates into a mixing bowl
  • Add the almond butter and maple syrup to a small sauce pan on low heat (stir while the mixture warms to combine the two ingrediants)
  • Pour the warmed almond butter/maple syrup over the oat mixture and then stir to combine (use your hands if you wish as well)
  • Line a baking dish with parchment paper and transfer the mixture into it
  • Use your hands to press the mixture down firmly, wet your hands lightly to smooth out the top or use a roller
  • Cover the mixture with parchment paper and place in the freezer for 20 mins to firm up
  • Remove from the freezer and slice into bars (I made about 12 small squares!)


  • These bars will last about a week in the fridge (if you can keep them out of your mouth that long!) or you can store them in the freezer for about a month
  • Try customizing these bars with different combinations of nut butters and nuts or try roasting the oats for about 15 minutes to get a crunchier consistencyย 
  • Feel free to add in any additional mix-ins like dried fruit, chocolate chips, coconut, etc…
