Easy Egg Muffins

Whenever it’s the weekend I have a thing with breakfasts-to-go. I always take the time to sit down and eat a great meal before school, but on the weekend I’m usually rushing out of the house. It seems like the it should be the opposite, right? Anyways, here’s a great breakfast (and snack!) idea for schooldays, weekends, or when you just don’t feel like cooking…


  • 4 egg whites
  • 1 whole egg
  • veggies (I don’t measure them, just load it up: peppers, onions, spinach, etc…)
  • 1/4 cup cheddar cheese
  • various spices (cajun seasoning, salt and pepper)
  • Basically, throw in whatever you would like in an omelette (some turkey pepperoni would be great too!)


  • Preheat the oven to 350 degrees
  • Combine all of the ingredients together in a bowl
  • Throw these bad boys into a lightly sprayed muffin tin and bake for 15 mins
  • Pop them out and store them in a sealed container in the fridge (eat cold or microwave slightly)
Another version I made: sweet peppers, spinach, and onion
