Mini Vegan Energy Donuts

If you want to change up the usual raw energy bites, try these baked ones. Not only are they in donut-form, they’re mini, so you feel extra special eating them! They’re very dense, so just one is a great snack to kick up your energy for a workout. The recipe was inspired by this version, if you’d like to check out the original (I’ve slightly altered it.)

So here’s the recipe for the “energy” version, but if you want something sweeter, follow the instructions marked with a “*”:


  • 1 1/4 cup oat flour (you can grind oats into a flour using a high speed blender)
  • 10 pitted medjool dates (*use 14)
  • 1/2 cup unsweetened almond milk
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 1 tbsp chia seeds and/or hemp hearts
  • 1 tbsp dark chocolate
  • *optional add-ins such as coconut, chocolate chips, powdered sugar for coating


  • Preheat oven to 350
  • Blend dates and almond milk in a food processor or high speed blender  until there are no large chunks of dates left
  • In a mixing bowl, stir together the flour, baking powder, baking soda, and cornstarch
  • Add to the mixture the lemon juice, vanilla extract and date mixture and stir until fully incorporated
  • Spoon or press into mini donut or muffin pan, then bake for 10 mins
  • Remove and let cool
  • *Dip in powdered sugar before eating or create a quick icing by combining and icing sugar and water, then drizzle over donuts
