Cheesy Cauliflower Tots

Sometimes I like to make vegetables “kid-friendly” because let’s not lie; adults love kid food too. This is a quick addition to any meal and tastes just as fun as it looks.


  • 1 small cauliflower (about 2 cups chopped)
  • 1 egg
  • 1/2 cup chopped onion
  • 1/4 cup red pepper (or any leftover veggies in your fridge)
  • 1/2 cup cheddar cheese
  • 1/4 cup parmesan cheese (or mozzarella)
  • 3/4 cup Panko breadcrumbs
  • dash of various spices (I used oregano, parsley and cajun seasoning)
  • salt and pepper to taste


  • Preheat over to 400, spray or grease a baking sheet
  • Boil some water, then place the head of cauliflower in the pot and cook (covered) for about 5 minutes
  • Drain the cauliflower then process in a food processor until fluffy (or chop finely)
  • In a bowl, combine all the ingrediants and mix with your hands
  • Form tater tots by hand with about a spoonful of the mixture, then place on baking sheet
  • Bake for about 20 minutes, flipping halfway (I also cranked up the heat to 450 for the last few minutes to get them extra crispy)
  • Serve hot with any dipping sauce (ketchup really makes these things taste like tater tots)
